Oved's Sabich (also spelled Sabih) is so famous in Israel, the name Oved is now synonym for Sabich for many locals. Oved probably deserves a full blown article, but you're not here for that. The bottom line is that Oved is one of the most important pitas to eat in Israel, right up there with Hummus and Falafel (you wouldn't skip that would ya?).

The line at Oved's seems to never end, even after they "officially" close. Most people get more than one pita, or some massive takeouts, so be ready to stand in line, sometimes for about 30 minutes.

Oved's self proclaimed "best pita in the universe", is more than just that. Oved has invented a special lingo, comprised of verbs he made up based on the different things that go into the pita, and the whole thing is a virtual soccer game (you'll see when you get there). Although you don't have to know the lingo, if you're a first timer, be ready that Oved will try and teach you how to order, and make a small celebration in your honor.

Though there isn't a "best way" to build a Sabich, we do have one important tip for you. The eggplant, which is the key ingredient, is made in batches. It's best to wait for a new batch to come out, and even let people order before you if need be. At the very least, don't go for the end of the batch, it's just not the same (though there are some people who actually prefer that! what a world...)

To wrap up, here's another expert tip: if you're a first timer, you should want Oved to personally make your pita, as he has some helpers around. If you tell him it's your first time, then it's important to Oved as well. And if like most folks you want another pita (or half, or quarter!), you don't have to stand in line again, you can just order from the inside and Oved's brother will usually make your Sabich. And yes, if you were wondering, some people would stand in line again, just so Oved will personally make theirs. It's that important to some people.
